Blackberry Airmail Punch

SERVES 6-8 PEOPLE
38 OZ SELVAREY WHITE Rum
18 OZ LIME JUICE
18 OZ BLACKBERRY SYRUP*
1 BOTTLE Champagne, preferably dry

How to make BLACKBERRY SYRUP:
ADD 1 LB Blackberries AND 24 OZ WATER TO SAUCEPAN ON HIGH HEAT. BRING TO BOIL. REDUCE TO MEDIUM. SIMMER FOR 15 MINUTES. ADD 24 OZ GRANULATED SUGAR, STIR TO DISSOLVE. STRAIN INTO 1 LITER CONTAINER. LET COOL.


Combine all ingredients in a pitcher over ice and stir until cool. Top with bubbles. Serve into rocks glass with ice. Garnish with blackberries and fresh mint.
